As a groomsman in my friend’s wedding, one of my jobs was to be at his place in the morning for breakfast. Easily accomplished… especially when breakfast consisted of slow cooked bacon, and absolutely mind-blowingly delicious boudin sausage. Boudin Blanc is white sausage made with pork (sometimes shredded) with rice and cajun spices stuffed into a sausage casing. There are different forms (like fried in balls or patties), but this is the kind we had and it was phenomenal. The preparer also used the drippings and combined them with bourbon to make a delicious kind of sauce to go with it. We paired our manly protein blast of a breakfast with Art In The Age liquor over ice. This is going to go down in my life as one of my favorite breakfast memories. If you can get your hands on Boudin Blanc, I urge you to try it.
