At our first family dinner in my uncle’s home, my aunt’s sister made this dish and it surprised me by how good it was. They called it cannelloni, but it wasn’t made with pasta. Instead, it was made using a kind of crepe. It was stuffed with ground beef, crumbly cheese, and topped with tomato sauce. The really surprising part was that the beef was seasoned with cardamom, nutmeg, and a few other spices. This was the first time I realized that a lot of Sudanese cooking uses nutmeg. That is a different spin from much of the cultural food I grew up with.
