Fresh Fried Fish

For lunch, my cousins wanted us to try fish from a shop they like. My mother is partial to fish with the bone in, so my cousins ordered a bunch of whole, butterflied fish for us. At the store, the fresh fish are marinated in a large tub with oil and spices like cumin. I peeked inside the tub, ready for a strong fish smell and I was shocked to discover no such thing. The fish was so fresh and marinated so well, that I couldn’t smell anything fishy at all. After we purchased the fish, an employee immediately took them in the back to start patting them with flour before tossing them into a large vat of oil for frying. The fish smelled incredible as we brought it home. The meat was tender and delicious. In hindsight though, we all would have preferred boneless fish and no one neglected to chastise my mother for her bone-in preference.
