Zigni – A Spicy Sweet Ethiopian Chicken Dish

I loved this dish. My aunt’s sister made this for us at her home and it is not Middle Eastern or Sudanese. It is an Ethiopian dish called, “Zigni.” It’s bone in chicken, baked in a spicy red sauce with hard boiled eggs as a garnish. The chicken basically fell off the bone and the sauce while spicy wasn’t overpowering. Considering that our plane took a detour to Adis Ababa, Ethiopia before finally dropping us off in Sudan, I appreciated getting to taste some authentic Ethiopian food.
